American Pancakes
Fluffy, golden pancakes make an easy weekend breakfast for the family, served warm with berries and maple syrup for a sweet, satisfying start to the day.

Ingredients
- 200g plain flour
- 2 tbsp caster sugar
- 2 tsp baking powder
- 1/2 tsp fine salt
- 2 eggs
- 300ml milk
- 40g unsalted butter, melted, plus 20g for frying
- 200g mixed berries
- 8 tbsp maple syrup
Instructions
- In a large bowl, whisk together the plain flour, caster sugar, baking powder and salt until evenly combined.
- In a jug, whisk the eggs and milk. Pour into the dry ingredients with the 40g melted butter, then whisk briefly until just combined. A few small lumps are fine; avoid overmixing or the pancakes will be tough.
- Leave the batter to stand for 5 minutes while you warm a large non-stick frying pan or griddle over medium heat.
- Melt a little of the remaining butter in the pan. Add about 3 tbsp batter per pancake, leaving space between them. Cook for 2–3 minutes, until bubbles rise across the surface and the undersides are golden.
- Flip the pancakes and cook for 1–2 minutes more, until puffed, golden and cooked through. Transfer to a warm plate and repeat with the remaining batter, adding more butter as needed.
- Divide the warm pancakes between four plates. Top with the mixed berries and drizzle with maple syrup. Serve immediately.
